Hénin-Delouvin, Rosé de Saignée NV

Located in the village of Aÿ-Champagne, just outside of Epernay, Hénin-Delouvin are proud fifth generation winemakers. Current custodians and brothers, Julien and Guillaume, have recently turned all of the vineyards over to organic viticulture and represent some of our favourite grower Champagnes. Rosé de Saignée NV is made from 100% Pinot Noir which has been "bled-off" (saignée) which leads to both its incredibly deep, intense colour and equally intense nose. Notes of ripe red cherry, strawberry, raspberry and rose petal moves to a rich palate with good texture and mousse, balanced by a fine acidity. A great pair with salmon.
